SOS (Save Our Supper)!

My dear friend Allory asked me the other day for help with vegetarian meal ideas. Now, we all know that Emma rarely eats her veggies, and she almost never eats vegetarian. (And even then, it's usually by accident...like when she makes fettuccine Alfredo and forgets to make the chicken part. She's also not sure why she's talking in the third person right now.)

Anyway, Allory and I both love to cook, and we both love to experiment with recipes. I can't speak for her, but I know my habit is to scan a recipe's ingredients list, substitute items wherever I feel like it, then just throw everything together in proportions that I think are appropriate. (This doesn't always work. Baking is a science so I always follow those recipes to a T. Some of my favorite sauces, like balsamic brown butter, require a specific proportion. Found that out the hard way.)

Wow, I'm random today. The point is. This is an official request to you, my lovely readers: Allory and I want you to share. Do you have any delicious vegetarian recipes (hopefully, ones that can be easily modified at a whim) in your cookbooks?

  2. Though I don't have many, most of my recipes are vegetarian friendly (or can easily be modified). Hum, since it's summer I would recommend my asparagus and melon salad- minus the prosciutto!
